Cumberland Valley Coffee 2010
1. Always buy your beans from a roaster who has the freshest roasted
coffees. (At Cumberland Valley Coffee we never roast until you order
to ensure your coffee is the best it can be!)
2. For optimal taste, grind your own coffee just before it is brewed.
The flavor of your coffee will start to deteriorate within 24 hours of
grinding.
3. Store your coffee in a cool, dark place, preferably in an air tight
container. Don’t freeze coffee as this can add unwanted moisture and
diminished quality.
4. Only order as much whole bean coffee as you can consume in a two
week period to guarantee freshness.
There are many terms used to describe roast levels: Italian,
Continental, American, Cinnamon, etc. At Cumberland Valley
Coffee we prefer the old, some would say archaic, way of
referring to roast levels - City, Full City, & Vienna roasts and the
levels in between.
Different varieties of coffee are at their best at different roast
levels. For instance, a Sumatran might reach it’s most desirable
state at a Full City plus or Vienna roast while some Costa Rican
coffees are happier at a City to City plus roast.
The lighter roasts tend to preserve the special qualities that
differentiate varieties and growing areas. A lighter roast can
also reveal any flaws. Dark roasts generally lend themselves to
a more roast specific taste, in other words, with darker roasts
it’s more about the roast level and less about the variety as far
as taste goes. Also darker roasted coffees have a lower
caffeine content (the longer you roast the more oils burn off).
